Jedah's Pork: Who says mechado can't be crispy?

This is another episode of Jedahperiments (hehe). I really don't know what to cook for the night but I already defrosted the pork chunks I bought earlier this morning.

I was busy making mango juice (check out the photo), I decided to throw in the meat in the pan to fry it. I found some leftover tomato sauce in the refrigerator and some potatoes.
Guess what? I had to google if the tomato sauce was still alive haha! Well, turns out it's still good as long as there are no molds in it and you have to taste it as well (OH NO!). Reminds me of my partner who does not know when a food is spoiled already even after eating it (yes, you heard it right hahahaha!).
Anyway, I actually don't know if this is mechado. I already cooked beef mechado before and the taste is somewhat similar. That's why I'll call it Jedah's Saucy Pork instead.
So here we goooo...

Ingredients
1 kg pork (adobo cut)
2 cups tomato sauce
2 medium-sized potatoes, cubed
3 cloves garlic, minced
1 medium-sized onion, sliced
2 tbsp sugar
Salt, sugar and pepper to taste

LET'S GET COOKING!
Put the meat in the pan and add around 250 mL of water. Let it cook until it gets fried in it's own oil. Meat should be brown already. You don't have to wait for it to turn fully fried like bagnet. We just want to sear the meat.
Remove the meat only from the pan. Sauté the garlic and onion.
Put the tomato sauce and add 1/2 cup of water. Let it boil.
Once boiling, put the meat, salt, sugar and pepper. Leave it for around 30 minutes under low to medium heat. You can adjust the amount of sugar depending on your preference but the goal is to get that sweet but sour and a bit salty taste.
Add the potatoes and simmer for another 10 minutes.
That should be it! It's indeed fun to play around in the kitchen especially when your experiment turns out great! I also told the people at home that if they want to eat this again, just tell me "Jedah's Pork". HAHAHA.
